PUMPKIN, APPLE AND GINGER SOUP
The soup consolidates gritty pumpkin with sweet, fresh apples and fiery ginger to make the most magnificently ameliorating taste sensation. Present with a cut of dried up bread and best with some crunchy pumpkin seeds or dried apple chips!
Fixings
500 g butternut squash or pumpkin slashed into little 3D shapes
2 medium function apples stalk expelled and cut into huge wedges
1 little red onion cut into vast wedges
3 garlic cloves (unpeeled)
1 tbsp olive oil
1/2 tsp salt and pepper
1 thumb-sized bit of ginger
1/2 tsp blended zest (or ¼ tsp nutmeg + cinammon)
500 ml vegetable stock
1 tbsp apple juice vinegar
Salt and pepper to taste
TO SERVE
A twirl of coconut milk

Directions
Preheat stove to 200C/390F. Include the squash/pumpkin, apples, onions and garlic to an expansive cooking tin with the olive oil, salt and pepper. Hurl to coat and dish for 30-40 minutes.
When cooked, unpeel the broiled garlic gloves and add them to a blender with whatever is left of the fixings. Mix everything until smooth, including progressively vegetable stock, if necessary. Season to taste.
To serve, include a whirl of coconut cream or sans dairy yogurt. Top with hacked chives and pumpkin seeds.
